Schola Sarmenti is opgericht door een aantal kwaliteitsbewuste producenten in het uiterste zuiden van Italië, het schiereiland Salento, met het specifieke doel: het behouden en verder uitbouwen van de culturele en technische nalatenschap van generaties wijnmakers in Salento. Het wijngoed bestaat uit authentieke wijngaarden die deskundig bewerkt en beschermd zijn gedurende ca. 80 jaar. De wijngaarden van Schola Sarmenti leveren vooral autochtone druivensoorten zoals de primitivo (al meer dan 500 jaar bekend in Apulië) en de negroamaro (al meer dan 2000 jaar), maar hier en daar staan ook mondiaal bekende druivensoorten aangeplant.Bij Schola Sarmenti hanteren ze slechts een aantal simpele regels: Laag rendement, handmatige oogst, voorselectie in de wijngaard en handmatige selectie in de kelder. Deze regels, in combinatie met de modernste wijnmaak technieken, zorgen voor hoge kwaliteitswijnen die het prachtige terroir van de streek in zich meedragen.Als de Pugliaanse zon de Malvasia druif ontmoet, ontstaat er een rijke, aromatische, frisvolle witte wijn met een vleugje vanille. De wijn is gemaakt van 100% Malvasia, volgens traditionele witte wijnbereiding (plukken, persen, vergisten, rijpen). Een prachtig glas met aroma's van honing, tropisch fruit, perfecte balans tussen frisheid en zuren. Harmonieus en elegant.Een intense wijn met een briljant gouden, strogele kleur. Het aroma is intens aromatisch en fruitig en de smaak levendig en gebalanceerd. Het is een gestructureerde, harmonieuze en delicate wijn. Drink deze wijn op een temperatuur van 8-10°C. Goed te combineren met rauwe vis gerechten met soja of wasabi, en gebakken/geroosterde schaal en schelpdieren. Visgerechten met zuurkool en roomsauzen of pikante en kruidige elementen. Rauw vlees of gevogelte met paté en gebakken ganzen en eendenlever smaakt ook erg goed bij deze wijn. Net zoals winterse crème soepen en gebakken en ovengegaarde groenten of zacht gegaard spek en roodbacteriekazen.De wijn rijpt op rvs-tanks, om het fruit volledig tot zijn recht te laten komen.
